Fried Plantain

Crispy, with a soft and sweet center. For all those sweet tooth owners out there, this quick fried plantain recipe is the perfect side dish or party food!

- Plantain Plantain 2 2
- Olive Oil Olive Oil 3 tbsp 3 tbsp
- Table Salt Table Salt to taste to taste
Instructions
- 1.*Note: For tastiest results, pick ripe plantains, these are the ones with black or yellow-patchy black skins, ripe plantains will taste deliciously sweet.*
- 2.Put a skillet/frying pan on the stove and add 1-2 tablespoons of olive oil – enough to cover the bottom of the pan. Heat the oil on a medium heat.
- 3.Peel the plantain and slice.
- 4.Once the oil is hot and almost bubbling add a handful of plantain slices, it´s easiest to cook in batches. Cook for 1-2 minutes and then flip the plantain slices to cook evenly for a final 1-2 minutes. The plantain should darken and have some crispiness.
- 5.Once the first batch of plantain is cooked, place the cooked slices on a roll of kitchen paper. Use a second layer on top and press slightly to remove the excess oil. Then transfer to a serving plate.
- 6.Continue to cook the remaining plantain in batches in this way, use more oil as required.
- 7.Season the final plate with salt and enjoy!
