Ginger and Pear Chia Pudding

This gorgeous overnight pudding combines caramelized pear with a hint of ginger and healthy chia seeds. Creamy and rich, it's a must for your vegan meal planner!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Pear Pear 1 1
  • Maple Syrup Maple Syrup 2 tbsp 2 tbsp
  • Ginger Root Ginger Root 1cm coin 1cm coin
  • Almond Milk Almond Milk 250ml 1 cup
  • Chia Seeds Chia Seeds 2 tbsp 2 tbsp
  • Vanilla Extract Vanilla Extract 1 tsp 1 tsp

Instructions

  1. 1.*For best results, prepare this recipe the night before serving.*
  2. 2.Chop pear and add to a small mixing bowl with honey, stir to combine and wait for honey to dissolve.
  3. 3.Peel and fine chop the ginger.
  4. 4.Transfer pear mixture to a pan on medium heat, add the ginger and honey and stir occasionally for 2min and set aside to cool.
  5. 5.Combine milk and chia seeds in a bowl and set aside.
  6. 6.Add cooled pear mixture to a blender and blend until smooth.
  7. 7.Add pear mixture to chia mixture and refrigerate for 4 to 8hrs, preferably overnight.
  8. 8.In the morning garnish with fruit, seeds or nuts of choice and enjoy!
