Who says you can’t have brownies and be healthy? Our recipe for vegan and gluten free chocolate brownies will really hit the spot. And they taste even better then next day too – if they last that long, of course! Delicious, dairy free and made in under 30 minutes!

- Rolled Oats Rolled Porridge Oats 120g 1 & 1/3 cups
- Almonds Almonds 100g 2/3 cup
- Dark Chocolate Dark Chocolate 60g 1/2 cup
- Coconut Sugar Coconut Sugar 75g 5 tbsp
- Baking Powder Baking Powder 1 tbsp 1 tbsp
- Chia Seeds Chia Seeds 1 tbsp 1 tbsp
- Water Water 4 tbsp 4 tbsp
- Vanilla Bean Paste Vanilla Bean Paste 1/2 tsp 1/2 tsp
- Coconut Oil Coconut Oil 3 tbsp 3 tbsp
- Apple Sauce Apple Sauce 5 tbsp 5 tbsp
- Raspberries Raspberries 75g 1/2 cup
Instructions
- 1.Preheat oven to 180C. Blend oats to oat flour by using a food processor. Pulse a few times so everything comes together.
- 2.Then grab a small bowl to make a chia egg. Add a tbsp of chia seeds to the bowl, fill with 4 tbsp of water, and set aside for at least 5 minutes.
- 3.Crush the almonds into a fine ground.
- 4.Melt chocolate together with coconut oil over boiling water until melted and mix together all wet ingredients plus the chia egg in another bowl.
- 5.Pour the wet mixture into the dry mixture and blend for about 2 minutes until smooth.
- 6.Grease muffin tray with a little coconut oil and pour about 1 ½ Tbsp of brownie batter into each hole.
- 7.Now carefully press 2-3 raspberries into each brownie and bake for 20-25 minutes. You can also cover the brownies with an extra sheet of parchment paper, to prevent the raspberries from geting burned.
- 8.When ready, take them out of the oven and let them cool down completely (yes, that step is important).
