- Ground Turmeric Ground Turmeric 1/8 tsp 1/8 tsp
- Red Chili Flakes Crushed Chillies 1/2 tsp 1/2 tsp

- Brown Sugar Brown Sugar 1 tbsp 1 tbsp
- Coconut Milk Light Coconut Milk Light 60ml 1/4 cup
- Water Water 580ml 2 & 1/3 cup
- Long Grain Rice Long Grain Rice 180g 1 cup
Instructions
- 1.Slice onions, and cut apples into eigths and remove seeds.
- 2.Add onion and garlic to a non-stick pan over medium heat and sautee until onions start to soften.
- 3.Add bay leaves, spices and chilli flakes and stir to incorporate.
- 4.Add apple slices, sugar and salt and coat apples with spices. Cook for 10min, uncovered.
- 5.Add 1/3 cup water and coconut milk, stir well and cook for 10min, covered.
- 6.Meanwhile, cook rice according to package instructions.
- 7.Divide rice and curry between two bowls and serve immediately.
- 8.Spices can be halved for a milder curry taste.
