- Fennel Fennel 2 bulbs 2 bulbs
- Olive Oil Olive Oil 2 tbsp 2 tbsp
- Table Salt Table Salt 1/2 tsp 1/2 tsp
- Lemon Lemon 1/2 1/2
- Ground Black Pepper Ground Black Pepper pinch pinch
- Fresh Parsley Fresh Parsley handful handful
Instructions
- 1.Preheat an oven to 180?C.
- 2.Slice the fennel into 5mm slices. Then in a large bowl, mix the sliced fennel with the olive oil, salt, 2 tablespoons of freshly squeezed lemon juice, ¾ of the parsley, a pinch of lemon zest and black pepper.
- 3.Place the slices onto a baking tray with parchment baking paper; avoiding overlapping.
- 4.Bake for 10 minutes, then flip and bake for other 7-8 minutes (watch closely for the last 5 minutes as they burn quite fast).
- 5.Garnish with the remaining parsley and serve.
