Grilled Nectarine Pasta Salad

A gorgeously simple salad starring sweet and juicy nectarines, spelt fusilli, and a fresh mint dressing. This grilled nectarine pasta salad recipe is a great summer recipe for your meal planner!

Ingredients

  • Dressing:
  • Olive Oil Olive Oil 60ml 1/4 cup
  • Lime Lime 1 1
  • Mint Mint 3 sprigs 3 sprigs
  • Avocado Avocado 1/2 1/2
  • Agave Syrup Agave Syrup 3 tsp 3 tsp
  • Filtered Water Filtered Water 60ml 1/4 cup
  • Sea Salt Sea Salt pinch pinch
  • Salad:
  • Nectarine Nectarine 1 1
  • Olive Oil Olive Oil 2 tsp 2 tsp
  • Sea Salt Sea Salt pinch pinch
  • Spelt Fusilli Spelt Fusilli 250g 2 & 1/2 cups
  • Avocado Avocado 1/2 1/2
  • Red Salad Onions Red Salad Onions 3 stalks 3 stalks
  • Mint Mint 8g 1/3 cup
  • White Sesame Seeds White Sesame Seeds 1 tsp 1 tsp
  • Black Sesame Seeds Black Sesame Seeds 1 tsp 1 tsp

Instructions

  1. 1.Preheat oven to 200°C.
  2. 2.Combining all dressing ingredients in a blender and blend until smooth. Refrigerate until ready to use.
  3. 3.Slice nectarine into thin slices, place on a parchment paper lined baking tray, drizzle with olive oil and salt and roast for 10min on each side until juicy.
  4. 4.Prepare pasta according to package instructions, once boiled, remove from heat and rinse with ice cold water.
  5. 5.Slice avocado and chop red salad onions.
  6. 6.Assemble pasta, avocado and nectarines on a serving plate, or divide between two salad bowls.
  7. 7.Drizzle with dressing, sprinkle with sesame seeds and garnish with fresh mint leaves.
  8. 8.Season to taste and enjoy!
