Ingredients

  • Avocado Avocado 2 2
  • Cherry Tomatoes Cherry Tomatoes 60g 1/3 cup
  • Red Onion Red Onion 1/2 1/2
  • Garlic Garlic 1 clove 1 clove
  • Lemon Juice Lemon Juice 1 tbsp 1 tbsp
  • Red Chilies Red Chillies 1/2 1/2
  • Fresh Cilantro Fresh Coriander 5g small handful
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 1 tsp 1 tsp

Instructions

  1. 1.Cut the avocados into halves, remove the stones and scoop out the flesh into a medium bowl.
  2. 2.Add lemon juice, salt, black pepper and oil, mash or blend the mixture until it is smooth and creamy.
  3. 3.Mix in the minced garlic, finely chopped tomatoes, coriander (cilantro) and onion, add minced chilli and stir well.
  4. 4.Refrigerate for 30 minutes for the best flavour.
