- Avocado Avocado 2 2
- Cherry Tomatoes Cherry Tomatoes 60g 1/3 cup
- Red Onion Red Onion 1/2 1/2
- Garlic Garlic 1 clove 1 clove
- Lemon Juice Lemon Juice 1 tbsp 1 tbsp
- Red Chilies Red Chillies 1/2 1/2
- Fresh Cilantro Fresh Coriander 5g small handful
- Table Salt Table Salt 1/2 tsp 1/2 tsp
- Ground Black Pepper Ground Black Pepper pinch pinch
- Extra Virgin Olive Oil Extra Virgin Olive Oil 1 tsp 1 tsp
Instructions
- 1.Cut the avocados into halves, remove the stones and scoop out the flesh into a medium bowl.
- 2.Add lemon juice, salt, black pepper and oil, mash or blend the mixture until it is smooth and creamy.
- 3.Mix in the minced garlic, finely chopped tomatoes, coriander (cilantro) and onion, add minced chilli and stir well.
- 4.Refrigerate for 30 minutes for the best flavour.
