Slow oven-roasted potatoes, gently baked and well seasoned - a simple yet wonderfully appetizing side dish!

Ingredients

  • Organic White Potatoes Organic White Potatoes 4 4
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 4 tbsp 4 tbsp
  • Sea Salt Sea Salt to taste to taste
  • Ground Black Pepper Ground Black Pepper to taste to taste
  • Mixed Herbs Mixed Herbs to taste to taste

Instructions

  1. 1.Note: I recommend Yukon Gold, Russet, or Red Bliss organic potatoes.
  2. 2.Place a rack in the lower third of your oven and preheat to 220°C.
  3. 3.Carefully wash and dry the potatoes without peeling them (which is why I particularly recommend organic potatoes).
  4. 4.Cut slits into the potato, stopping just 1 cm before you reach the bottom so the potato remains in one piece. Spread the the slices open a little with your fingers.
  5. 5.Arrange the potatoes on a baking tray, brush them all over with the olive oil, and sprinkle generously with salt and pepper. Make sure the oil and the seasonings drip down into the space between the slices.
  6. 6.Bake for almost 50 minutes, or a little longer (depending on the size of your potatoes) - I bake until I can see the slices turn crispy on top.
  7. 7.Remove the rack from the oven and quickly add some mixed herbs if you like.
  8. 8.Serve immediately while the edges are at their crispiest and the inside is softer and succulent. Enjoy!
