Homemade Light Orange Jam

Using only three ingredients, this fresh orange jam is a breeze to make. And honestly, what beats a homemade bread spread in the morning?

- Orange Orange 4 4
- Lemon Lemon 1/2 1/2
- Granulated Sugar Granulated Sugar 120g 3/5 cup
Instructions
- 1.Peel the oranges, cut into wedges and place in a saucepan. Bring to a boil.
- 2.Squeeze any excess juice from the orange peel into the saucepan. Add the squeezed lemon juice in too. Cook for 10mins on a rolling boil.
- 3.Meanwhile, shave off any excess white matter from the orange peel of one of the oranges, and then cut the peel into 1cm squares.
- 4.Then add the peel and sugar to the saucepan, stir and increase the heat for 10mins.
- 5.By now the peel should have softened. Use a hand emulsifier to blend the peel, but use lightly to leave some texture.
- 6.Cook for a final 10-15mins on a low heat to thicken the jam.
- 7.Once cooked, pour the jam into a jar and refrigerate until serving, for best results leave overnight.
