Served with lettuce, a flavorful chickpea salad, salad dressing and feta cheese, these Greek-inspired sweet potato fries are a fingerlicking party snack or appetizer!

- Chickpeas in Water Chickpeas in Water 400g 2 cups
- Cherry Tomatoes Cherry Tomatoes 200g 1 & 2/3 cups

- Black Olives Black Olives 45g 1/3 cup
- Fresh Parsley Fresh Parsley small handful 1/4 cup

- Dijon Mustard Dijon Mustard 2 tsp 2 tsp
- Greek Yoghurt Greek Yoghurt 125g 1/2 cup
- Dried Oregano Dried Oregano 1 tsp 1 tsp
- Lettuce Lettuce 200g 3 cups
- Feta Cheese Feta Cheese 150g 1 cup
- Red Chili Flakes Crushed Chillies 1/4 tsp 1/4 tsp
Instructions
- 1.Preheat oven to 220c.
- 2.Wash and cut sweet potatoes into fries, toss with olive oil, and sprinkle with salt and pepper.
- 3.Place on a baking tray and bake for 30min or until lightly browned and crispy, turning halfway through.
- 4.While fries are baking, toss chickpeas, sliced cherry tomatoes, chopped spring onion, olives, chopped parsley, 1 tbsp olive oil, 1 tbsp lemon juice and a pinch of salt and pepper in a small bowl and set aside to marinade.
- 5.Combine 2 tbsp olive oil, 2 tbsp red wine vinegar, 1 clove garlic, 2 tsp Dijon mustard, 1/2 cup of Greek yoghurt and 1 tsp oregano in a blender and blend until smooth.
- 6.Assemble ingredients in layers: fries, lettuce, chickpea salad, salad dressing and feta cheese.
- 7.Season to taste and serve immediately.
