Mediterranean Garlic and Olive Pasta

- Spaghetti Pasta Spaghetti Pasta 500g 3 & 1/2 cups
- Garlic Garlic 1 clove 1 clove
- Olive Oil Olive Oil 60ml 1/4 cup
- Lemon Lemon 1/2 1/2
- Black Olives Black Olives 40g 1/3 cup
- Sun Dried Tomatoes Sun Dried Tomatoes 30g 1/2 cup
- Fresh Parsley Fresh Parsley 2 tbsp 2 tbsp
- Feta Cheese Feta Cheese 75g 1/2 cup
Instructions
- 1.Cook spaghetti according to packet instructions.
- 2.Add olive oil and roughly chopped garlic to pan, reduce to simmer and cook the garlic over low heat for 15min, discard garlic and turn heat off.
- 3.Halve and pit the olives and add to the spaghetti with freshly squeezed lemon juice and sun dried tomatoes. Toss to combine.
- 4.Garnish with crumbled feta and parsley and serve.
