Mediterranean Loaded Butternut Fries

- Butternut Butternut 1 1
- Greek Yoghurt Greek Yoghurt 2 tbsp 2 tbsp
- Olive Oil Olive Oil 1 tbsp 1 tbsp
- Dijon Mustard Dijon Mustard 1 tbsp 1 tbsp
- Red Wine Vinegar Red Wine Vinegar 1 tbsp 1 tbsp
- Dried Oregano Dried Oregano 1/4 tsp 1/4 tsp
- Dried Basil Dried Basil 1/4 tsp 1/4 tsp
- Garlic Garlic 1 clove 1 clove
- Cucumber Cucumber 1 1
- Sun Dried Tomatoes Sun Dried Tomatoes 15g 1/4 cup
- Black Olives Black Olives 30g 1/4 cup
- Spring Onion Spring Onion 1 1
- Kale Kale 35g 1/2 cup
- Vegan Feta Cheese Vegan Feta Cheese 150g 1 cup
- Sea Salt Sea Salt pinch pinch
- Ground Black Pepper Ground Black Pepper pinch pinch
- Red Chili Flakes Crushed Chillies 1/4 tsp 1/4 tsp
Instructions
- 1.Preheat oven to 220c.
- 2.Wash and cut butternut into fries, toss with olive oil, and sprinkle with salt and pepper.
- 3.Place on a baking tray and bake for 30min, or until crispy, turning halfway through.
- 4.While fries are baking, roughly chop cucumber, sundried tomato, olives and spring onion, combine in a bowl and set aside.
- 5.Combine Greek yoghurt, olive oil, Dijon mustard, red wine vinegar, oregano, basil and garlic in a blender and blend until smooth.
- 6.Assemble ingredients in layers: fries, salad, dressing.
- 7.Season to taste and serve immediately.
