A simple, vegetarian pasta salad with sun-dried tomatoes, olives, peppers, feta cheese and onions. A classic Mediterranean summer recipe!

- Red Onion Red Onion 1 1
- Green Olives Green Olives 70g 1/2 cup
- Black Olives Black Olives 70g 1/2 cup
- Feta Cheese Feta Cheese 100g 2/3 cup
- Mustard Mustard 2 tbsp 2 tbsp
- Extra Virgin Olive Oil Extra Virgin Olive Oil 4 tbsp 4 tbsp
- Balsamic Vinegar Balsamic Vinegar 2 tbsp 2 tbsp

Instructions
- 1.Boil water, add a pinch of salt and cook the pasta for 8-10min, allow to cool under running cold water.
- 2.Dice red onion.
- 3.Salad dressing: Slowly add vinegar to 2 tbsp mustard and stir to combine, add 4 tbsp olive oil, then add onions and the spices (salt, sweet paprika, oregano, black pepper).
- 4.Slice red pepper and sun dried tomatoes into fingertip sized pieces and add to the dressing bowl.
- 5.Slice and add olives.
- 6.Mix well with cold pasta.
- 7.If too dry add 1 tbsp oil at a time.
- 8.Slice feta cheese into cubes and add to salad.
