Mexican Loaded Fries

- Cherry Tomatoes Cherry Tomatoes 100g 2/3 cup
- Jalapeno Jalapeno 1 1
- Spring Onion Spring Onion 1 1
- Black Beans Black Beans 200g 3 & 1/3 cups
- Corn Kernels Sweetcorn 180g 1 cup
- Fresh Parsley Fresh Parsley 1 tbsp 1 tbsp
- Avocado Avocado 1 1
- Greek Yoghurt Greek Yoghurt 60g 1/4 cup
- Lime Juice Lime Juice 1 tbsp 1 tbsp
- Sea Salt Sea Salt pinch pinch
Instructions
- 1.Preheat oven to 220c.
- 2.Wash and cut potatoes into fries, toss with olive oil, and sprinkle with salt and pepper.
- 3.Place on a baking tray and bake for 30min, or until lightly golden and crispy, turning halfway through.
- 4.While fries are baking, slice cherry tomatoes and jalapeno pepper, and chop spring onion.
- 5.Combine black beans, corn, cherry tomatoes, jalapeno, spring onion and parsley in a bowl and set aside.
- 6.Combine avocado, Greek yoghurt, lime juice and salt in a blender and blend until smooth.
- 7.Assemble ingredients in layers: fries, bean mixture, avocado crema.
- 8.Season to taste and serve immediately.
