Perfect for meal prep or packed lunches, this appetizing spinach salad combines apricot, chickpea, feta cheese and cilantro (coriander) with a tasty ginger and cinnamon olive dressing!

- Chickpeas in Water Chickpeas in Water 200g 1 cup
- Dried Apricots Dried Apricots 50g 1/4 cup
- Baby Spinach Baby Spinach 30g 1 cup
- Feta Cheese Feta Cheese 40g 1/4 cup
- Fresh Cilantro Fresh Coriander 4 sprigs 4 sprigs
- Olive Oil Olive Oil 2 tbsp 2 tbsp
- Lemon Juice Lemon Juice 1 tbsp 1 tbsp
- Ground Ginger Ground Ginger 1/2 tsp 1/2 tsp
- Ground Cinnamon Ground Cinnamon 1/2 tsp 1/2 tsp
- Ground Cumin Ground Cumin 1/2 tsp 1/2 tsp
- Ground Cayenne Pepper Ground Cayenne Pepper 1/4 tsp 1/4 tsp

Instructions
- 1.Drain and rinse chickpeas.
- 2.Whisk together olive oil, lemon juice, ginger, cinnamon, cumin and cayenne pepper, black pepper and sea salt.
- 3.Pour the dressing into a glass jar with a lid.
- 4.Add remaining ingredients in layers, starting with the chickpeas, chopped apricots, baby spinach, feta and coriander (cilantro).
- 5.Garnish with nuts and seeds of choice (optional).
- 6.Shake jar and enjoy immediately, or refrigerate for up to three days.
