- Olive Oil Olive Oil 2 tbsp 2 tbsp
- Yellow Onion Brown Onion 1 1
- Garlic Garlic 1 clove 1 clove
- Portobellini Mushrooms Portobellini Mushrooms 150g 2 cups
- Spelt Fusilli Spelt Fusilli 150g 1 & 1/2 cups
- Mushroom Stock Mushroom Stock 500ml 2 cups
- Tamari Tamari 1 tsp 1 tsp
- Thyme Thyme 2 sprigs 2 sprigs
- Vegan Sour Cream Vegan Sour Cream 60ml 1/4 cup
- Cornstarch Cornflour 1 tbsp 1 tbsp
- Sea Salt Sea Salt pinch pinch
- Ground Black Pepper Ground Black Pepper pinch pinch
Instructions
- 1.Add olive oil, sliced onion and minced garlic to a pot and cook for 5min or until onions are translucent.
- 2.Add pasta, mushroom broth, tamari, nutritional yeast, thyme, salt and pepper to the pot.
- 3.Bring to boil and simmer for 15min, stirring occasionally.
- 4.Turn heat off, stir in vegan sour cream until incorporated.
- 5.Season to taste and enjoy!
