- Tofu Tofu 300g 1 & 1/5 cup
- Yellow Bell Pepper Yellow Bell Pepper 1 1
- Red Bell Pepper Red Bell Pepper 1 1
- Cherry Tomatoes Cherry Tomatoes 200g 1 & 1/3 cups
- Capers Capers 1 tbsp 1 tbsp
- Paprika Paprika 2 tsp 2 tsp
- Dried Oregano Dried Oregano 2 tsp 2 tsp
- Dried Parsley Dried Parsley 2 tsp 2 tsp
- Table Salt Table Salt pinch pinch
- Ground Black Pepper Ground Black Pepper pinch pinch
Instructions
- 1.In a large frying pan pour the extra-virgin olive oil, paprika, and oregano and cook over low heat.
- 2.Slice tofu into cubes and, when the oil is hot, sauté in the pan for 5 minutes with a pinch of salt.
- 3.Dice peppers and add to tofu with a dash of pepper and cook for 10min.
- 4.Slice tomatoes into quarters and add to pan with capers.
- 5.Sauté, allowing it all to flavor for 5min on medium-high heat.
- 6.Sprinkle with fresh parsley and serve.
