Pancakes with Seasonal Fruit

Light and fluffy pancakes topped with maple syrup, kiwi and blueberries. Delicious!

Ingredients

  • Banana Banana 1/2 1/2
  • Strawberries Strawberries 4 4
  • Raspberries Raspberries 30g 1/5 cup
  • Blueberries Blueberries 30g 1/5 cup
  • Kiwi Kiwi 1/2 1/2
  • Spelt Flour Spelt Flour 180g 1 & 1/2 cups
  • Baking Powder Baking Powder 4 tsp 4 tsp
  • Vanilla Sugar Vanilla Sugar 2 tsp 2 tsp
  • Table Salt Table Salt 1 tsp 1 tsp
  • Rice Milk Rice Milk 300ml 1 & 1/4 cups
  • Organic Eggs Organic Eggs 1 1
  • Organic Butter Organic Butter 20g 1 tbsp
  • Maple Syrup Maple Syrup 2 tbsp 2 tbsp

Instructions

  1. 1.Sieve the flour into a large bowl.
  2. 2.Add baking powder, salt and sugar.
  3. 3.Make a well in the centre and pour in the milk and egg. Mix everything.
  4. 4.Heat a frying pan, add a tiny bit of butter or oil over medium heat.
  5. 5.Scoop the batter into the pan (1-2 ladles per pancake).
  6. 6.Bake until brown on both sides.
  7. 7.Garnish with seasonal fruit and serve with maple syrup.
