Pancakes with Seasonal Fruit

- Raspberries Raspberries 30g 1/5 cup
- Blueberries Blueberries 30g 1/5 cup
- Kiwi Kiwi 1/2 1/2
- Spelt Flour Spelt Flour 180g 1 & 1/2 cups
- Baking Powder Baking Powder 4 tsp 4 tsp
- Vanilla Sugar Vanilla Sugar 2 tsp 2 tsp
- Table Salt Table Salt 1 tsp 1 tsp
- Rice Milk Rice Milk 300ml 1 & 1/4 cups
- Organic Eggs Organic Eggs 1 1
- Organic Butter Organic Butter 20g 1 tbsp
- Maple Syrup Maple Syrup 2 tbsp 2 tbsp
Instructions
- 1.Sieve the flour into a large bowl.
- 2.Add baking powder, salt and sugar.
- 3.Make a well in the centre and pour in the milk and egg. Mix everything.
- 4.Heat a frying pan, add a tiny bit of butter or oil over medium heat.
- 5.Scoop the batter into the pan (1-2 ladles per pancake).
- 6.Bake until brown on both sides.
- 7.Garnish with seasonal fruit and serve with maple syrup.
