- Penne Pasta Penne Pasta 150g 1 & 1/2 cups
- Baby Potatoes Baby Potatoes 150g 2/3 cup
- Cherry Tomatoes Cherry Tomatoes 100g 2/3 cup
- Pistachio Nuts Pistachio Nuts 50g 1/2 cup
- Green Olives Green Olives 120g 5/6 cup
- Emmental Cheese Emmental Cheese 100g 1 cup
- Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp
- Table Salt Table Salt pinch pinch
- Ground White Pepper Ground White Pepper pinch pinch
Instructions
- 1.Boil potatoes for 15min.
- 2.Cook pasta according to package instructions.
- 3.Slice cherry tomatoes lengthwise into quarters.
- 4.Place cherry tomatoes in a large bowl with the chopped pistachios, boiled potatoes cut into bitesized pieces, and emmental cheese cut into cubes.
- 5.Toss drained pasta into the bowl with remaining ingredients, season with the extra virgin olive oil, a pinch of salt and white pepper and stir gently.
- 6.Serve immediately or refrigerate overnight and enjoy as a packed lunch the next day.
