- Butternut Noodles Butternut Noodles 500g 3 & 1/3 cups
- Cauliflower Cauliflower 1 head 1 head
- Soy Milk Soya Milk 125ml 1/2 cup
- Olive Oil Olive Oil 1 tbsp 1 tbsp
- Lemon Juice Lemon Juice 1 tbsp 1 tbsp
- Garlic Garlic 1 clove 1 clove
- Ground Black Pepper Ground Black Pepper pinch pinch
- Sea Salt Sea Salt pinch pinch
- Garden Peas Garden Peas 60g 1/3 cup
- Red Chili Flakes Crushed Chillies 2 tsp 2 tsp
Instructions
- 1.Preheat oven to 200c.
- 2.Bring cauliflower to boil in a large pot and cook for 10min or until tender and drain.
- 3.In a bowl, mix peas, olive oil and chilli.
- 4.Spread peas out on a baking sheet and roast for 15min.
- 5.Heat olive oil in a frying pan over medium heat. Finely chop garlic, add to pan and cook, stirring, for 3min.
- 6.Cook pasta according to packet instructions.
- 7.Place cauliflower, garlic, milk, olive oil, lemon juice, salt and pepper to a blender and blend until smooth.
- 8.Drain pasta, add cauliflower mixture and combine.
- 9.Serve topped with roasted peas.
