Peach and Vanilla Ice Cream

Peach, apricot, and citrus fruits are at the heart of this refreshing and energizing summertime treat. Combined with coconut milk and vanilla flavoring this delicious vegan ice cream is dairy free and extremely easy to make. Have a go at homemade dairy free ice cream with this wonderful fruit ice cream!

- Peach Peach 450g 2 cups
- Apricot Apricot 190g 1 cup
- Coconut Milk Coconut Milk 400ml 1 & 3/5 cups
- Lemon Lemon juice of 1 juice of 1
- Orange Orange juice of 1/2 juice of 1/2
- Vanilla Powder Vanilla Powder 1 tsp 1 tsp
- Maple Syrup Maple Syrup 4 tbsp 4 tbsp
- Coconut Butter Coconut Butter 4 tbsp 4 tbsp
- Orange Blossom Water Orange Blossom Water 2 tsp 2 tsp
Instructions
- 1.*Timing Tip: the ice cream will need to chill in the freezer for at least 6 hours before serving.
- 2.*Note: Chill the coconut milk in the fridge the night before.
- 3.Start by removing all the pits from the peaches and apricots.
- 4.Add all ingredients apart from the coconut butter to a high speed food processor and blend until smooth and creamy.
- 5.Then add the coconut butter and blend to combine. (I always add the coconut butter last to prevent the mix from curdling).
- 6.Pour the mixture into a bread tin or lunch box, cover with foil and freeze for minimum of 6 hrs but preferably overnight.
- 7.Take the container out of the freezer about 15 minutes before serving to allow the icecream to soften a little.
- 8.Serve using a hot wet icecream scoop.
