Picnic Basmati Rice Salad

This is one of my favorite picnic salad recipes showcasing fresh summer colors and mixing Mediterranean flavours with aromatic basmati rice.

- Basmati Rice Basmati Rice 150g 3/4 cup
- Cherry Tomatoes Cherry Tomatoes 10 2/3 cup
- Celery Celery 1 stalk 1 stalk
- Black Olives Black Olives 30g 1/5 cup
- Cashew Nuts Cashew Nuts 30g 1/4 cup
- Carrot Carrot 2 2
- Gomasio Gomasio 1 tbsp 1 tbsp
- Extra Virgin Olive Oil Extra Virgin Olive Oil 5 tbsp 5 tbsp
Instructions
- 1.Cook the rice in salted boiling water according to package instructions.
- 2.Meanwhile, prepare the other ingredients mixing them together in a bowl: cut the cherry tomatoes into quarters, slice the peeled carrots as well as the pitted black olives, chop an entire stalk of celery and add a handful of cashews.
- 3.Once the rice is cooked, spread the rice out on a large plate or tray to let it cool quickly. Let cool until room temperature then place in a large serving bowl and add the ingredients prepared earlier.
- 4.Mix carefully while adding the extra virgin olive oil and one optional table spoon of Gomasio (a tasty and healthy sesame salt condiment originating from Japanese cuisine) to season this tasty salad.
- 5.Serve after cooling it for 20 minutes in the fridge.
