A homely, warming potato and carrot soup flavored with fresh parsley, chives and goats cheese.

- Frozen Peas Frozen Peas 450g 3 cups

- Vegetable Stock Vegetable Stock 2 tbsp 2 tbsp
- Goats Cheese Goats Cheese 150g 1 cup
- Dried Chives Dried Chives 1 tbsp 1 tbsp
- Fresh Parsley Fresh Parsley handful 1/3 cup
- Olive Oil Olive Oil 1/2 tbsp 1/2 tbsp

Instructions
- 1.Peel and dice potatoes into small cubes, and peel and cut carrots into small pieces.
- 2.Heat oil in a saucepan over medium-high heat and sear the potato cubes and the carrots in the pan.
- 3.Cut green beans and spring onions into small pieces.
- 4.Add the vegetable stock to the water and heat it, then boil the vegetables in water until soft.
- 5.Add goats cheese and stir.
- 6.Cut chives into fine rings, chop parsley, add to soup and season to taste.
