- Salad:
- Red Potatoes Red Potatoes 900g 5
- Green Olives Green Olives 140g 1 cup
- Cherry Tomatoes Cherry Tomatoes 250g 1 & 2/3 cups
- Feta Cheese Feta Cheese 200g 1 & 2/3 cups
- Corn Kernels in Water Sweetcorn in Water 180g 1 cup
- Celery Celery 2 2
- Cashew Nuts Cashew Nuts 2 tbsp 2 tbsp
- Pumpkin Seeds Pumpkin Seeds 2 tbsp 2 tbsp
- Sesame Seeds Sesame Seeds 2 tbsp 2 tbsp
Instructions
- 1.In a small bowl, whisk together lemon juice, chopped oregano, salt, and pepper.
- 2.Gradually pour in olive oil, whisking until dressing is combined.
- 3.Boil potatoes for 10-15min, peel, cut into bite sized pieces and place in a large serving bowl.
- 4.Add remaining ingredients, add dressing and toss gently to combine and serve.
