Provolone Basmati Rice Salad

- Basmati Rice Basmati Rice 300g 1 & 2/3 cups
- Provolone Cheese Provolone Cheese 200g 2 cups
- Pistachios Nuts Pistachios Nuts 150g 1 & 1/2 cups
- Carrot Carrot 3 3
- Cucumber Cucumber 1 1
- Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp
- Balsamic Vinegar Balsamic Vinegar to taste to taste
- Table Salt Table Salt to taste to taste
Instructions
- 1.Cook the rice according to package instructions (approx. 15-20 minutes, include salt in the cooking water).
- 2.Meanwhile, slice the cucumber and discard its watery core containing its seeds.
- 3.Peel the carrot. Chop the carrots, cheese, and unsalted pistachios into small cubes.
- 4.Once the rice is cooked, spread the rice out on a large baking sheet pan and let cool for 10 minutes, or until room temperature. Place in a large serving bowl.
- 5.Add all the other ingredients plus the extra virgin olive oil and some balsamic vinegar if you like. Toss to combine and serve.
