Top this rain stir fried lettuce with pine nuts and turmeric for a quick and deliciously tasty vegan meal!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Iceberg Lettuce Iceberg Lettuce 300g 4 cups
  • Raisins Raisins 40g 1/4 cup
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 3 tbsp 3 tbsp
  • Ground Turmeric Ground Turmeric 1/2 tsp 1/2 tsp
  • Pine Nuts Pine Nuts 20g 3 tsp
  • Ground Black Pepper Ground Black Pepper to taste to taste
  • Table Salt Table Salt to taste to taste

Instructions

  1. 1.Put the raisin in a cup and let it soak in fresh water.
  2. 2.Tear the lettuce leaves into large chunks or chop them roughly.
  3. 3.Heat the extra virgin olive oil and the garlic cut in half in a large frying pan or wok for a few minutes.
  4. 4.Toss the pine nuts and stir for 1-2 minutes before adding the raisin drained and squeezed.
  5. 5.Stir-fry for 2 more minutes, then add the lettuce, turmeric, and some freshly ground black pepper. Add salt to taste.
  6. 6.Cook for 3-4 minute, stirring so that the lettuce is coated in sauce. Cover with a lid, turn off the heat and let rest for a little while.
  7. 7.Serve warm along with steam cooked brown rice or other whole grains. You can also use it to fill a pita bread or sandwich adding some roasted tofu slices as well.
