Top this rain stir fried lettuce with pine nuts and turmeric for a quick and deliciously tasty vegan meal!

- Iceberg Lettuce Iceberg Lettuce 300g 4 cups
- Raisins Raisins 40g 1/4 cup
- Extra Virgin Olive Oil Extra Virgin Olive Oil 3 tbsp 3 tbsp
- Ground Turmeric Ground Turmeric 1/2 tsp 1/2 tsp
- Pine Nuts Pine Nuts 20g 3 tsp
- Ground Black Pepper Ground Black Pepper to taste to taste
- Table Salt Table Salt to taste to taste
Instructions
- 1.Put the raisin in a cup and let it soak in fresh water.
- 2.Tear the lettuce leaves into large chunks or chop them roughly.
- 3.Heat the extra virgin olive oil and the garlic cut in half in a large frying pan or wok for a few minutes.
- 4.Toss the pine nuts and stir for 1-2 minutes before adding the raisin drained and squeezed.
- 5.Stir-fry for 2 more minutes, then add the lettuce, turmeric, and some freshly ground black pepper. Add salt to taste.
- 6.Cook for 3-4 minute, stirring so that the lettuce is coated in sauce. Cover with a lid, turn off the heat and let rest for a little while.
- 7.Serve warm along with steam cooked brown rice or other whole grains. You can also use it to fill a pita bread or sandwich adding some roasted tofu slices as well.
