A light and refreshing vegan salad combining fresh grapes, cooked beet, mixed seeds and a lime and olive oil dressing. Perfect on a hot summer day!

- Cooked Beet Cooked Beetroot 1 1
- Salad Tomatoes Salad Tomatoes 2 2
- Red Grapes Red Grapes 75g 1/2 cup
- Sunflowers Seeds Sunflowers Seeds 2 tbsp 2 tbsp
- Pumpkin Seeds Pumpkin Seeds 2 tbsp 2 tbsp
- Olive Oil Olive Oil 1 tbsp 1 tbsp
- Lime Lime 1 1
Instructions
- 1.Rinse and roughly chop the lettuce.
- 2.Rinse the tomatoes and cut into quarters along with the beetroot. Add the salad, tomatoes and beetroot to a salad bowl.
- 3.Wash the grapes and add to the salad along with sunflower and pumpkin seeds.
- 4.Drizzle the salad with olive oil and freshly squeezed lime juice. Mix the salad together and serve.
