Ingredients

  • Red Lentils Fusilli Red Lentils Fusilli 180g 1 cup
  • Shallot Shallot 1 1
  • Zucchini Courgette 180g 1 & 1/2 cups
  • Sea Salt Sea Salt pinch pinch
  • Table Salt Table Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper seasoning seasoning
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp

Instructions

  1. 1.Cut the shallot into thin slices and let it fry gently into a large frying pan for almost one minute.
  2. 2.Then add the courgette washed and cut into thin slices and simmer over a medium-low heater for about 10-15 minutes.
  3. 3.Meanwhile, cook the fusilli lentils in plenty of salted water then drain and toss them directly into the pan with a little cooking water.
  4. 4.Season with freshly ground black pepper and serve.
