Red Pepper and Feta Toast

A lightly baked open sandwich topped with feta and gouda cheese, fresh pepper, onion and tomatoes. A tasty lunchtime sandwich, high in protein and full of flavor!

- Red Bell Pepper Red Bell Pepper 1 1
- Red Onion Red Onion 1 1
- Cherry Tomatoes Cherry Tomatoes 5 5
- Romaine Lettuce Romaine Lettuce 4 leaves 4 leaves

- Extra Virgin Olive Oil Extra Virgin Olive Oil 1 tbsp 1 tbsp
- Goat Gouda Cheese Goat Gouda Cheese 1 slice 1 slice
Instructions
- 1.Preheat oven to 200c.
- 2.Place chilli bread in oven for 5 minutes.
- 3.Cut feta cheese into small pieces, add lemon juice and mash with a fork.
- 4.Remove bread from oven and cut in half.
- 5.Drizzle olive oil over the bread then spread the smashed feta on it.
- 6.Slice red pepper and cut cherry tomatoes in half, chop onion, add to bread, drizzle with lemon juice and season to taste.
- 7.Add salad leaves, top with goat gouda and cover with leftover bread.
