Roasted Nectarine Flatbread Pizza

Add some sparkle to your meal plan with this vibrant and striking alternative pizza. Topped with oven-roasted nectarine, chickpeas, pomegranate, mint and parsley - it's punchy, sweet and sour and absolutely delicious!

- Chickpeas in Water Chickpeas in Water 50g 1/4 cup
- Pomegranate Seeds Pomegranate Seeds 2 tbsp 2 tbsp

- Fresh Cilantro Fresh Coriander 1 tbsp 1 tbsp
- Linseed Linseed 1/2 tsp 1/2 tsp
Instructions
- 1.Preheat oven to 220c
- 2.Place parsley, mint, garlic and 2 tbsp olive oil in a blender and pulse to form a paste.
- 3.Arrange sliced nectarines in a single layer on a baking sheet and roast for 20min, or until desired colour has been reached, remove from oven and leave the oven on.
- 4.Layer one tortilla on top of the other and spread paste over top layer, leaving a 1.5cm border around the edge.
- 5.Add chickpeas, pomegranate seeds and chopped red salad onion.
- 6.Drizzle with olive oil and season with salt and pepper.
- 7.Bake for 10-15min, until crust becomes golden brown.
- 8.Garnish with fresh coriander (cilantro) and linseeds, season to taste and serve immediately.
