Roasted Nectarine Flatbread Pizza

Add some sparkle to your meal plan with this vibrant and striking alternative pizza. Topped with oven-roasted nectarine, chickpeas, pomegranate, mint and parsley - it's punchy, sweet and sour and absolutely delicious!

Ingredients

  • Flat Leaf Parsley Flat Leaf Parsley 6g 1/4 cup
  • Mint Mint 7g 1/4 cup
  • Garlic Garlic 1 clove 1 clove
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Lime Juice Lime Juice 1 tbsp 1 tbsp
  • Sea Salt Sea Salt pinch pinch
  • Nectarine Nectarine 2 2
  • Olive Oil Olive Oil 1 tbsp 1 tbsp
  • Sea Salt Sea Salt pinch pinch
  • Pizza Base Pizza Base 2 2
  • Chickpeas in Water Chickpeas in Water 50g 1/4 cup
  • Pomegranate Seeds Pomegranate Seeds 2 tbsp 2 tbsp
  • Red Onion Red Onion 1 1
  • Fresh Cilantro Fresh Coriander 1 tbsp 1 tbsp
  • Linseed Linseed 1/2 tsp 1/2 tsp

Instructions

  1. 1.Preheat oven to 220c
  2. 2.Place parsley, mint, garlic and 2 tbsp olive oil in a blender and pulse to form a paste.
  3. 3.Arrange sliced nectarines in a single layer on a baking sheet and roast for 20min, or until desired colour has been reached, remove from oven and leave the oven on.
  4. 4.Layer one tortilla on top of the other and spread paste over top layer, leaving a 1.5cm border around the edge.
  5. 5.Add chickpeas, pomegranate seeds and chopped red salad onion.
  6. 6.Drizzle with olive oil and season with salt and pepper.
  7. 7.Bake for 10-15min, until crust becomes golden brown.
  8. 8.Garnish with fresh coriander (cilantro) and linseeds, season to taste and serve immediately.
