- Cauliflower Cauliflower 1 head 1 head
- Sun Dried Tomatoes Sun Dried Tomatoes 60g 1 cup
- Roasted Bell Peppers Roasted Bell Peppers 2 2
- Olive Oil Olive Oil 100ml 2/5 cup
- Garlic Garlic 2 cloves 2 cloves
- Nutritional Yeast Nutritional Yeast 2 tbsp 2 tbsp
- Raw Cashew Nuts Raw Cashew Nuts 65g 1/2 cup
- Lemon Lemon 1/2 1/2
- Table Salt Table Salt pinch pinch
Instructions
- 1.Preheat oven to 200C.
- 2.Break cauliflower into small florets and place in a bowl.
- 3.Add remaining ingredients to a high speed blender and blend until smooth, adding 2-3 tbsp olive oil if necessary.
- 4.Pour pesto into the bowl with the florets and mix until florets are coated.
- 5.Add florets to a parchment paper lined baking sheet and bake for 30-35 minutes.
