Sauteed Courgette with Smoked Tofu

- Smoked Tofu Smoked Tofu 200g 4/5 cup
- Zucchini Courgette 2 2
- Organic Raisins Organic Raisins 50g 1/3 cup
- Pine Nuts Pine Nuts 35g 1/4 cup
- Celery Celery 1 1
- Shallot Shallot 1 1
- Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp
- Ground Black Pepper Ground Black Pepper pinch pinch
- Ground Turmeric Ground Turmeric 1 tsp 1 tsp
- Table Salt Table Salt to taste to taste
Instructions
- 1.Let raisins soak in fresh water for 5 min.
- 2.Wash and dry the courgette (zucchini). Cut lengthwise in half, repeat to obtain another half lengthwise. Cut off the exposed core part discarding the seeds, then dice the courgette.
- 3.Wash and dry the celery stalk and finely chop.
- 4.Heat the olive oil in a large frying pan or wok and add the shallot finely sliced. Drop in the pine nuts and stir for 1-2 minutes before adding the raisin (drained and squeezed).
- 5.Stir-fry for 2 more minutes, then add the diced courgette and celery with a pinch of salt.
- 6.Cover with a lid and cook for 10-15 minute, stirring often so that all vegetables cook evenly and stay crunchy.
- 7.In the final minutes, add the ground turmeric and some freshly ground black pepper, which not only will increase the bioavailability of turmeric but also provide several other health benefits.
- 8.Serve warm alone or along with freshly cooked Basmati rice.
