Sauteed Courgette with Smoked Tofu

A sauteed zucchini (courgette) and shallot dish with smoked tofu, raisins and pine nuts.

  • Smoked Tofu Smoked Tofu 200g 4/5 cup
  • Zucchini Courgette 2 2
  • Organic Raisins Organic Raisins 50g 1/3 cup
  • Pine Nuts Pine Nuts 35g 1/4 cup
  • Celery Celery 1 1
  • Shallot Shallot 1 1
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Ground Turmeric Ground Turmeric 1 tsp 1 tsp
  • Table Salt Table Salt to taste to taste

Instructions

  1. 1.Let raisins soak in fresh water for 5 min.
  2. 2.Wash and dry the courgette (zucchini). Cut lengthwise in half, repeat to obtain another half lengthwise. Cut off the exposed core part discarding the seeds, then dice the courgette.
  3. 3.Wash and dry the celery stalk and finely chop.
  4. 4.Heat the olive oil in a large frying pan or wok and add the shallot finely sliced. Drop in the pine nuts and stir for 1-2 minutes before adding the raisin (drained and squeezed).
  5. 5.Stir-fry for 2 more minutes, then add the diced courgette and celery with a pinch of salt.
  6. 6.Cover with a lid and cook for 10-15 minute, stirring often so that all vegetables cook evenly and stay crunchy.
  7. 7.In the final minutes, add the ground turmeric and some freshly ground black pepper, which not only will increase the bioavailability of turmeric but also provide several other health benefits.
  8. 8.Serve warm alone or along with freshly cooked Basmati rice.
