A lighter version of the English breakfast, delicious thyme infused scrambled eggs with fresh juicy tomatoes on wholewheat bread.

- Thyme Thyme small handful small handful
- Organic Milk Organic Milk 1 tbsp 1 tbsp
- Organic Butter Organic Butter 1 tbsp 1 tbsp
- Wholewheat Bread Wholemeal Bread 2 slices 2 slices
- Large Vine Tomatoes Large Vine Tomatoes 1/2 1/2
- Baking Powder Baking Powder 1/4 tsp 1/4 tsp
- Table Salt Table Salt seasoning seasoning
- Ground Black Pepper Ground Black Pepper seasoning seasoning
Instructions
- 1.Crack the eggs into a bowl, add a tablespoon of milk, salt and pepper and some finely chopped thyme. Whisk until smooth.
- 2.Add some butter to a frying pan and heat for 2-3 mins until the butter is bubbling.
- 3.Pour in the egg mix and reduce heat to a simmer. Whisk continuously fluffing up the egg mix as it cooks.
- 4.Once cooked, serve with buttered toast and sliced tomato.
