- Bouillon Vegetable Stock Bouillon Vegetable Stock 2 tsp 2 tsp
- Table Salt Table Salt 1/4 tsp 1/4 tsp
- Ground Black Pepper Ground Black Pepper pinch pinch
- Tomato Puree Tomato Puree 2 tbsp 2 tbsp
- Fresh Basil Fresh Basil handful handful
- Young Watercress Young Watercress handful handful
- Water Water 800ml 3 cups
Instructions
- 1.Heat the olive oil in a pot and add diced red onion and tomatoes then stir-fry for 2-3 minutes.
- 2.Add the basil, salt, pepper and bouillon and stir-fry for another 2-3 minutes.
- 3.Pour on 800ml hot water and cook for 15 minutes at medium heat.
- 4.Blend the soup with a hand blender, sprinkle on some young watercress and serve.
