If you want a quick cake, this is the perfect recipe: the dough of this simple vegan cake is fast to make and you can choose to flavor it as you wish: just need a bit of imagination and make the most of your pantry!

- Self Raising Flour Self Raising Flour 300g 2 & 1/2 cups
- Maple Syrup Maple Syrup 120g 1/3 cup
- Corn Oil Corn Oil 120ml 1/2 cup
- Baking Powder Baking Powder 1 tsp 1 tsp
- Apple Juice Apple Juice 50ml 1/5 cup
- Table Salt Table Salt pinch pinch
- Walnuts Walnuts 25g 1/5 cup
- Ground Cinnamon Ground Cinnamon 1 tsp 1 tsp
Instructions
- 1.In a large bowl sieve the dry ingredients and combine them. This will allow the yeast to distribute well making the dough softer.
- 2.In another bowl place all liquid ingredients: oil, apple juice, and maple syrup. If the dough is too dry, add oil and maple syrup (eg 10 ml of maple and 10 ml of oil) in equal parts. Chop half of the walnuts and mix them into the dough, the others will go on the surface as a decoration, before baking.
- 3.Combine powders and liquids together and mingle well to obtain a homogeneous mixture. This is the time to personalize your cake: add some dried fruit, or raisin, or even apple pieces, chocolate drops ... It will make your cake special!
- 4.Pour the dough into an oiled and floured cake pan and cook in a hot oven for about 40 minutes at 180 °.
