Spelt Pasta with Spinach and Courgette

A quick yet delicious spelt pasta dish with fresh spinach, zucchini (courgette) and Italian herbs.

- Spelt Pasta Spelt Pasta 250g 2 & 1/2 cups
- Zucchini Courgette 1 1
- Fresh Spinach Fresh Spinach handful 1/2 cup
- Yellow Onion Brown Onion 1 1
- Garlic Garlic 1 clove 1 clove
- Tomato Pasta Sauce Tomato Pasta Sauce 200g 4/5 cup
- Extra Virgin Olive Oil Extra Virgin Olive Oil 1 tbsp 1 tbsp
- Mixed Italian Herbs Mixed Italian Herbs to taste to taste
- Sea Salt Sea Salt to taste to taste
- Ground Black Pepper Ground Black Pepper to taste to taste
- Black Sesame Seeds Black Sesame Seeds 1 tsp 1 tsp
- Water Water 500ml 2 cups
Instructions
- 1.Add a saucepan of salted water to the stove and once the water is boiled pour in the pasta. Cook as per package instructions.
- 2.Peel and chop the onion and garlic and sauté in a frying pan with olive oil till they go golden in colour.
- 3.Now add the tomato sauce and spices. Cook for a further 3 mins.
- 4.Then add washed spinach and turn off the stove.
- 5.Rinse and drain the pasta.
- 6.Serve the pasta and with the vegetable pasta on top.
- 7.Top with sesame seeds and enjoy!
