A tasty tomato soup, spiced with garam masala and thyme, is comfort food at its best! A great light meal option for lunch or dinner!

- Diced Tomatoes Chopped Tomatoes 250g 1 & 1/4 cups
- Yellow Onion Brown Onion 1/2 1/2
- Garlic Garlic 1 clove 1 clove
- Ginger Root Ginger Root thumb thumb
- Coconut Milk Coconut Milk 150ml 3/5 cup
- Vegetable Broth Vegetable Broth 250ml 1 cup
- Thyme Thyme 5 sprigs 5 sprigs
- Dried Oregano Dried Oregano 1 tsp 1 tsp
- Garam Masala Garam Masala 1 tsp 1 tsp
- Balsamic Vinegar Balsamic Vinegar 1 tbsp 1 tbsp
- Rapeseed Oil Rapeseed Oil 1 tbsp 1 tbsp
- Table Salt Table Salt seasoning seasoning
- Ground White Pepper Ground White Pepper seasoning seasoning
Instructions
- 1.Pour oil into a saucepan and heat. Peel the ginger and chop as well as the onion and garlic. Add all to the saucepan as well as the garam masala. Cook for 2 mins.
- 2.Then add the chopped tomatoes, thyme leaves, oregano, balsamic vinegar and vegetable broth.
- 3.Season with the white pepper and salt, cover and cook for 15 mins.
- 4.Then pour in the coconut milk for a final 5 mins.
- 5.Now, pour the contents into a blender and blend until smooth.
- 6.Serve with a garnish of thyme.
