- Raw Cashew Nuts Raw Cashew Nuts 125g 1 cup
- Unsweetened Almond Milk Unsweetened Almond Milk 125ml 1/2 cup
- Lemon Lemon 1 1
- Maple Syrup Maple Syrup 1 tsp 1 tsp
- Sea Salt Sea Salt pinch pinch
- Filtered Water Filtered Water 250ml 1 cup
- Ground Cumin Ground Cumin 1/4 tsp 1/4 tsp
- Ground Black Pepper Ground Black Pepper pinch pinch
Instructions
- 1.Soak cashews in boiling water for 2hrs, drain and rinse.
- 2.Make cashew yoghurt by adding cashews, almond milk, juice from one lemon, maple syrup and a pinch of sea salt to a blender and blend until smooth and creamy, transfer to a container with a lid and refrigerate for 1hr to thicken.
- 3.Add cashew yoghurt, filtered water, ice blocks, cumin and pepper to a blender and pulse until combined.
- 4.Garnish with mint or coriander (cilantro) and serve immediately.
