Stir Fried Tofu with Peppers

A tasty vegan stir fry combining tofu, arugula (rocket), peppers and capers. Gluten free and rich in protein!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Tofu Tofu 200g 4/5 cup
  • Arugula Salad Rocket Salad 60g 3 cups
  • Red Bell Pepper Red Bell Pepper 1 1
  • Capers Capers 1 tbsp 1 tbsp
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp

Instructions

  1. 1.Cut the tofu into cubes and let it stir-fry with the extra virgin olive oli over medium-high heat until golden on most sides.
  2. 2.Wash and dry the red pepper cut it into slices and toss into the pan. Let cook for 10 minutes and then add the washed and drained rocket leaves (arugula) together with the capers.
  3. 3.Continue to sauté for 5-10 more minutes until a fork can easily pass through the pepper slices.
  4. 4.Serve warm, as a light meal or together with basmati rice or couscous if you like.
