You'll love this quick and healthy penne pasta salad, easy to make and perfect for a quick lunch or packed picnic lunch!

- Penne Pasta Penne Pasta 400g 2 & 2/3 cups
- Red Garlic Red Garlic 2 cloves 2 cloves
- Cherry Tomatoes Cherry Tomatoes 12 12
- Dried Oregano Dried Oregano 1 tbsp 1 tbsp
- Feta Cheese Feta Cheese 200g 1 & 1/3 cups
- Fresh Basil Fresh Basil handful handful
- Extra Virgin Olive Oil Extra Virgin Olive Oil 4 tbsp 4 tbsp
Instructions
- 1.Wash and dry the tomatoes, then cut them in half. Put them in a large bowl together with the garlic cloves cut in thick slices, the extra virgin olive oil, the oregano, the basil leaves roughly chopped by hand and Feta cheese cut into cubes.
- 2.Let it all melt for a better flavoring and meanwhile, cook the penne in plenty of salted water.
- 3.When ready drain them and rinse under cold water to interrupt the cooking process so the pasta will remain “al dente”.
- 4.Then toss the drained pasta into the bowl with all the other ingredients and stir gently.
- 5.Leave it so for a while (you can also keep it in the fridge until it is time to serve), then serve o prepare a tasteful potluck for your picnic party!
