Sweet Potato Chocolate Mousse

Protein-rich and dairy free, this vegan mousse combines sweet potato, soy yogurt, cacao powder and maple syrup to delicious effect! A silky smooth mousse dessert loaded with crunchy cacao nibs - irresistibly good and so easy to make!

- Sweet Potato Sweet Potato 1 1
- Soy Yoghurt Soya Yoghurt 4 tbsp 4 tbsp
- Raw Cocoa Powder Raw Cocoa Powder 3 tbsp 3 tbsp
- Maple Syrup Maple Syrup 2.5 tbsp 2.5 tbsp
- Coconut Oil Coconut Oil 1 tbsp 1 tbsp
- Cacao Nibs Cacao Nibs 2 tbsp 2 tbsp
- Sea Salt Sea Salt pinch pinch
Instructions
- 1.Peel and dice the sweet potato. Place the diced sweet potato in a steamer and steam until soft enough to mash (roughly 10 mins).
- 2.Melt the coconut oil. Once the sweet potato has cooled, add it to a bowl and mash with a fork until there are no lumps.
- 3.Add the remaining ingredients (excluding the cacao nibs), and mix really well until the mixture is smooth and fluffy. You can use a handheld mixer to make it easier if you prefer.
- 4.Add the sea salt if desired for taste.
- 5.Split the mixture between 2 glasses, top with the cacao nibs and place in the fridge for a few hours to set. They can be left overnight if required.
