Ingredients

  • Tofu Tofu 450g 1 & 4/5 cups
  • Coconut Oil Coconut Oil 1 tbsp 1 tbsp
  • Satay Marinade:
  • Yellow Onion Brown Onion 1 1
  • Garlic Garlic 3 cloves 3 cloves
  • Ginger Root Ginger Root 3cm piece 3cm piece
  • Lemon Juice Lemon Juice 2 tbsp 2 tbsp
  • Soy Sauce Soy Sauce 2 tbsp 2 tbsp
  • Apple Cider Vinegar Apple Cider Vinegar 3 tbsp 3 tbsp
  • Peanut Sauce:
  • Coconut Milk Light Coconut Milk Light 375ml 1 & 1/2 cups
  • Red Curry Paste Red Curry Paste 2 tsp 2 tsp
  • Smooth Peanut Butter Smooth Peanut Butter 125g 1/2 cup
  • Brown Sugar Brown Sugar 2 tbsp 2 tbsp
  • Soy Sauce Soy Sauce 2 tbsp 2 tbsp
  • Lemon Juice Lemon Juice 1 tbsp 1 tbsp
  • Table Salt Table Salt pinch pinch
  • Ginger Root Ginger Root 2cm piece 2cm piece

Instructions

  1. 1.Marinade:
  2. 2.Puree all ingredients in a food processor.
  3. 3.Cube tofu and marinade it.
  4. 4.Leave covered for at least 2 hours in the fridge.
  5. 5.Peanut sauce:
  6. 6.Whisk together coconut milk and red curry paste, garlic and onion in saucepan.
  7. 7.Whisk in peanut butter until smooth.
  8. 8.Stir in sugar and lemon juice and bring to a simmer.
  9. 9.Meanwhile cook the rice as per packet instructions.
  10. 10.Reduce heat to low, and cook 5 minutes, or until thickened, stirring often.
  11. 11.Take off stove.
  12. 12.Sauté the tofu on all sides until golden brown in a pan using the oil.
  13. 13.Serve with white rice and peanut sauce.
