- Coconut Milk Coconut Milk 400ml 1 & 3/5 cups
- White Rice White Rice 180g 1 cup
- Pure Cane Sugar Pure Cane Sugar 4 tbsp 4 tbsp
- Pineapple Pineapple 1/2 1/2
- Maple Syrup Maple Syrup 3 tbsp 3 tbsp
- Coconut Oil Coconut Oil 1 tsp 1 tsp
- Olive Oil Olive Oil 1 tbsp 1 tbsp
Instructions
- 1.Bring coconut milk and rice to boil, once cooking, lower heat to simmer. Add sugar.
- 2.Cook for 25-30 min, stirring often to prevent the rice from getting burned. Take off the stove once the rice pudding has thickened up and rice is soft.
- 3.In a medium skillet heat up maple syrup and coconut oil, fry until golden from each side.
- 4.Carve the pineapple into chunks. Add the pineapple to a lined baking tray. Drizzle with a little olive oil and roast in the oven for 15 minutes.
- 5.Once all cooked, serve the coconut rice topped with the roasted pineapple.
