Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • All Purpose Flour Plain Flour 480g 4 cups
  • Caster Sugar Caster Sugar 70g 1/3 cup
  • Vegan Butter Vegan Butter 75g 5 tbsp
  • Almond Milk Almond Milk 250ml 1 cup
  • Baking Powder Baking Powder 2 tsp 2 tsp
  • Table Salt Table Salt pinch pinch
  • Clotted Cream Clotted Cream 80g 1/3 cup
  • Raspberry Jam Raspberry Jam 120g 1/2 cup

Instructions

  1. 1.Preheat oven to 180 C and line baking tray with parchment paper.
  2. 2.Select the knead function on your food processor and blend together flour, salt, baking powder and sugar (I usually pulse it 3-4 times)
  3. 3.Now add the butter and blend until dough gets a little crumbly.
  4. 4.Carefully add the almond milk while food processor is blending until dough forms.
  5. 5.Put a little flour to the kitchen surface and knead dough for a minute.
  6. 6.Shape with your hands into small balls (should have the size of half a hand) and after putting them onto the baking tray, press each ball down a little to give it a flatter shape.
  7. 7.Bake for 15-20 minutes or until golden brown.
  8. 8.Serve with clotted cream and / or fruits / jam.
