Vegan Tofu Nuggets

Enjoy some vegan comfort food with these delicious tofu nuggets. Perfect as a appetizer with some tasty sauce or as part of a platter!

- Tofu Tofu 300g 1 & 1/5 cups
- Jerk Seasoning Jerk Seasoning 1 tsp 1 tsp
- Table Salt Table Salt 1/4 tsp 1/4 tsp
- Olive Oil Olive Oil 1 tbsp 1 tbsp
- For the coating:
- All Purpose Flour Plain Flour 50g 3 tbsp
- Unsweetened Soy Milk Unsweetened Soya Milk 100ml 2/5 cup
- Breadcrumbs Breadcrumbs 100g 1 cup
- Jerk Seasoning Jerk Seasoning 3 tsp 3 tsp
- Table Salt Table Salt 1 tsp 1 tsp
- Ground Black Pepper Ground Black Pepper pinch pinch
Instructions
- 1.*Note: The night before - wrap the tofu in kitchen towel and apply weight (like a couple of thick books) to remove as much as water as possible. Place the tofu in the freezer overnight (at least 5 hours). This process will give the tofu a spongy texture.*
- 2.Next day, defrost the tofu at room temperature and tear into a 2cm small pieces.
- 3.Gently mix the torn tofu with 1 teaspoon of jerk seasoning and ¼ teaspoon of salt in a large mixing bowl then set aside.
- 4.Combine the flour and soya milk in a small bowl, mix well and set aside.
- 5.Combine the breadcrumbs, 2 teaspoons of jerk seasoning, salt and pepper.
- 6.You should have a bowl of tofu, a liquid mixture and a powder mixture by now.
- 7.Quickly dip each piece of tofu into the liquid mixture and then roll into the powder mixture, until completely coated, repeat same process for each piece.
- 8.Heat up the oil in a small non-stick saucepan and carefully add the seasoned tofu piece by piece into the oil (don’t pour it all at one go as it will stick together), deep fry it until it is nice golden colour all around and floating on the oil.
- 9.Place the deep-fried tofu on a tray with oil-absorbing cooking paper or kitchen towel and allow to cool for 5-10 minutes.
- 10.Serve with freshly squeezed lime juice and your preferred flavour sauce (sweet chilli sauce, curry sauce or sweet & sour sauce... etc.).
