Vegetarian Chilli Wraps

- Arugula Salad Rocket Salad 200g 10 cups
- Feta Cheese Feta Cheese 150g 1 cup
- Carrot Carrot 3 3
- Yellow Onion Brown Onion 2 2
- Garlic Garlic 1 clove 1 clove
- Rapeseed Oil Rapeseed Oil 2 tbsp 2 tbsp
- Peeled Tomatoes Peeled Tomatoes 400g 2 cups
- Corn Kernels in Water Sweetcorn in Water 360g 2 cups
- Kidney Beans in Water Kidney Beans in Water 360g 2 cups
- Sambal Oelek Sambal Oelek 1 tbsp 1 tbsp
Instructions
- 1.Preheat oven to 200c.
- 2.Chop carrots and onions into pieces.
- 3.Heat oil and sear carrots, then add onions and garlic.
- 4.Cut peeled tomatoes into pieces and add to the pan.
- 5.Add sweetcorn and kidney beans and cook for 5 minutes before adding chilli pepper and a pinch of salt.
- 6.Place wraps in preheated oven, remove after 5min, spread sour cream on each and then add warm vegetable sauce.
- 7.Cut the feta cheese into cubes and add to tortillas along with rocket salad (arugula).
- 8.Season to taste.
