Veggie Patty with Carrot Salad

Combine rolled oats, lupin beans, carrots and onion for these healthy, low fat veggie patties. Served with a lettuce salad and yogurt dip!

- Rolled Oats Rolled Porridge Oats 120g 1 & 1/3 cups
- Lupin Beans Lupin Beans 120g 3/4 cup
- Carrot Carrot 3 3
- Spring Onion Spring Onion 4 4
- Vegetable Stock Vegetable Stock 2 tbsp 2 tbsp
- Table Salt Table Salt pinch pinch
- Ground Black Pepper Ground Black Pepper pinch pinch
- Sweet Paprika Sweet Paprika 1 tbsp 1 tbsp
- Water Water 400ml 1 & 3/5 cups
- Natural Yoghurt Natural Yoghurt 150g 3/5 cup
- Lemon Lemon 1/2 1/2
- Romaine Lettuce Romaine Lettuce 60g 1 cup
Instructions
- 1.Peel and dice the onion, then brown in oil over medium-high heat.
- 2.Peel and grate carrots.
- 3.Add onions and carrots to the lupin, oatflakes, vegetable stock and mix.
- 4.Add 250ml warm water and mix well until it forms a thick mass.
- 5.Take one handful at a time and form into balls, then gently press flat.
- 6.Heat oil in a pan and brown the veggie patties on each side.
- 7.Combine lemon juice and yoghurt, add a pinch of salt and pinch of pepper.
- 8.Serve patty with yoghurt dip.
