Wild mushrooms marinated in a spicy tomato sauce and served on a open rye bread sandwich - delicious!

- Wild Mushrooms Wild Mushrooms 400g 5 cups
- Yellow Onion Brown Onion 2 2
- Large Vine Tomatoes Large Vine Tomatoes 1 1
- Table Salt Table Salt seasoning seasoning
- Ground Black Pepper Ground Black Pepper seasoning seasoning
- Paprika Paprika seasoning seasoning
- Olive Oil Olive Oil 2 tbsp 2 tbsp
- Fresh Parsley Fresh Parsley handful handful
Instructions
- 1.Wash the mushrooms carefully and cut them into small dices or slices.
- 2.Cut the onions and tomatoes in dices and fry them with high heat in olive oil for app. 5 min. The onions should be see-through and tomato mushy before adding the mushrooms. Fry for another 8-10 min. while stirring every min. Add the spices 1 minute before finish frying. Cut the parsley as small as you like it the best.
- 3.Place the bread in the oven of toaster and toast until light brown. Brush some olive oil on it, add the mushroom topping and parsley.
- 4.I have those things for lunch as its light but yet a warm and healthy meal.
